Garlic and Avocado Quinoa/Brown Rice Bowl

So why quinoa and brown rice?

-Quinoa allows you to get a hit of protein without consuming meat which contains chemicals, hormones, and fat.

-Brown rice has been proven to be healthier and easier to digest than white rice because white rice is stripped of all of its nutrients. When only the outermost layer of a grain of rice (the husk) is removed, brown rice is produced. To produce white rice, the next layers underneath the husk (the bran layer and the germ) are removed, leaving mostly the starchy endosperm.

This special blend can be found at Whole Foods and is made by Seeds of Change. Just as its labeled, it is “Goodness from the ground up.”

My favorite way to incorporate this grain mix into my diet is seen in the photograph below:

Here is the recipe:

1.) Pour the grain mix into your pan and cover it 3/4 of the way with water. Put your stove on medium heat and stir until the grains absorb the water.

2.) Place one teaspoon of Earth Balance (a vegan butter replacement) into the grains and mix in.

3.) Chop up some kale and add it to the mixture. (I used red kale here) After the kale begins to soften you can add a dash of sea salt to make sure that it keeps its flavor.

4.) Add one gain of cannelloni beans to the mix and let this soften and soak up the flavors of the other ingredients. Once these ingredients are completely heated, you can pour the mixture into a large bowl.

5.) Add avocado slices and mozzarella Daiya cheese. You can add some more Earth Balance to taste.

This filling and tasty dinner takes only ten minutes to make and is super healthy, low-calorie, and serves as a great source of clean protein.
