Super Food Summer Salad

I have never been a big fan of the typical lettuce, cucumber, tomato salad that is often placed in front of us at restaurants.

I mean, there are no fun flavors, there is 0 protein involved, and eating it seems like your doing more of a “healthy chore” rather then indulging in your favorite lunch. So trust me when I say, that this salad is awesome.  With flavors like coconut, pomegranate, and sesame seeds, this salad truly tastes exotic. Best of all, there is no order in which you need to put in the ingredients.

Therefore, anyone can truly whip up this delicious/low-cal dish. Throw the salad ingredients in as you wish, mix the salad dressing up in a glass cup, and pour it in to enjoy.

Summer Salad
Salad ingredients:

Put in as much of each ingredient as you like

-Radicchio lettuce (super yummy 😉

-Frisee lettuce

-Tomato slices

-Avocado slices

-Vegan Feta/Motzerella cheese (I use Teese)

-Pomegranate Seeds (super fruity 😉

-Coconut Flakes

-Sun Flower Seeds

-Cover in hemp seeds and sesame seeds

Salad Dressing:

1.) 3 tablespoons of olive oil

2.) 2 tablespoons of apple cider vinegar

3.) 2 tablespoons of balsamic vinegar

4.) 1 teaspoon of Dijon Mustard

5.) 1/4 teaspoon of salt and pepper

6.) 1/4 teaspoon of minced garlic

Mix the ingredients thoroughly in the glass cup and pour them over the salad to enjoy.
